Dairy Free Banana Pancakes

Ingredients

  • 2 Bananas

  • 2 large eggs

  • 2 tbsp coconut oil melted

  • 1 tsp vanilla extract

  • 120 g / 1 cup plain flour

  • 2 tsp baking powder

  • 1 cup dairy free milk

Directions

  1. Mash the bananas into a large mixing bowl

  2. Add the eggs, melted coconut oil, dairy free milk & vanilla, wisk together until combined.

  3. Add the flour and baking powder to the wet ingredients and stir with a metal spoon until combined. Don’t worry if there are a few lumps.

  4. The mixture should be a bit thicker than your average pancake batter. Add a little extra milk if too thick or a little extra flour if too thin.

  5. Heat a large pan over medium heat, and add the coconut oil

  6. Once melted carefully pour the coconut oil into your batter and mix in. Whatever is left in the pan should be enough to cook with.

  7. Drop 2-3 tbsp of batter into the pan to make each pancake, reduce the heat to low. Once bubbles start to form you can flip the pancakes and cook on the other side.
