Indian Spinach Rice

Spinach Rice

I first made this Vegan Spinach Rice for my Toddler as an alternative to the Kitchidi he's so addicted to. However this spinach rice makes a fantastic side dish option for the adults in your family as well, just add extra salt and a squeeze of lemon to bump up the flavours.

This Spinach Rice recipe is designed to be made in an Instant Pot (thats the only way i've tested it so far. 

Ingredients

  • 1 tbsp Oil (or Ghee if you’re not vegan)

  • 1 tsp Cumin Seeds

  • 1 Cinnamon Stick

  • 2 small Bay Leaves

  • 1 small Onion finely diced

  • 2 cloves of Garlic (finely chopped)

  • 1 medium Potato (chopped into bitesize pieces)

  • 1 cup Green Peas (frozen is fine)

  • ¼ tsp Turmeric

  • ¼ tsp Garam Masala

  • 2 cups Spinach

  • ½ cup White Basmati Rice

  • 1 ¼ Cup Water

  • 1 tsp Salt (more to taste)

  • 1-2 tsp Lemon Juice (optional depending on your tastebuds)

Directions

  1. Wash the rice until the water runs almost clear.

  2. Put the rice into a small bowl and cover with drinking water, leave this to soak while you prep your vegetables.

  3. Use the saute setting on your pressure cooker to heat 1 tbsp of Oil or Ghee.

  4. Add your 1 tsp Cumin seeds, 2 bay leaves and cinnamon stick.

  5. Once the cumin starts spluttering add your chopped onion & garlic.

  6. Once the onions are evenly browned add the 1 diced Potato, 1 cup Peas, ¼ tsp Turmeric, ¼ tsp Garam Masala, and 1 tsp Salt.

  7. Stir to combine and fry for 1-2 minutes.

  8. Next add the chopped spinach, saute until wilted.

  9. Next add the drained ½ cup Basmati Rice to the pot and stir to combine.

  10. Next add the water, stir it up and switch off the Saute setting. Put the lid on your Instant Pot, make sure to turn the dial to seal the cooker.

  11. Pressure cook for 5 minutes on high, once the timer has finished you can manually release the steam after 5 minutes, open the lid and give your spinach rice a stir.

  12. If you think your toddler will like it you can now add a couple tsp’s of lemon juice.

  13. Add extra salt to taste (if you are giving salt to your toddler)
